Balsamic Bruschetta Recipe

Serves: 8

  • 1 baguette, cut into ¼-inch slices

  • ⅓ cup chopped fresh basil
  • 1 oz Parmesan cheese, freshly grated
  • 2 garlic cloves, minced
  • 1 tbsp good-quality balsamic vinegar
  • 2 tsp extra-virgin olive oil
  • ¼ tsp kosher salt
  • ¼ tsp freshly ground black pepper

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Lightly brush both sides of the baguette slices with 1 tablespoon of olive oil. Place on a large baking sheet.
  3. Toast the bread in the oven for 5 to 10 minutes, flipping halfway through, until golden and crisp.
  4. Meanwhile, in a mixing bowl, combine the diced tomatoes, chopped basil, grated Parmesan, and minced garlic.
  5. Drizzle in the balsamic vinegar and 2 teaspoons of olive oil. Season with salt and pepper.
  6. Spoon the tomato mixture generously onto the toasted bread slices.
